Recipe of the Month: February 2013


During these chilly nights, it’s nice to cuddle up on the couch, watch Grey’s Anatomy on Netflix, and enjoy a mug of delicious soup. I made this last weekend and well, it’s to die for!

Definitely too good not to share! I found this recipe via pinterest and the link took me to The Country Cook (where there are many more amazing recipes!).

Anyway, save this page, write this recipe down, do whatever you need to do, but you HAVE to make this! I know i’ll be making it again very soon!

1 lb. ground beef
1 small onion, diced
1 large bell pepper, diced
1 can (29 oz.) diced tomatoes
1 (10 oz) can tomato soup (or tomato sauce)
1 (14 0z) can chicken broth (or beef broth)
2 cups cooked rice
1 tbsp. sugar
t tsp. garlic powder
salt & pepper, to taste
shredded cheddar cheese, for topping
Also, I recommend buying a Vidalia Chop Wizard. SO much easier than chopping the onion and green peppers by hand. It cuts time down a tremendous amount as well.
In a large pot, brown and crumble ground beef along with diced green peppers and onion over medium-high heat.

When cooked, drain excess grease from beef mixture.

Put beef back into pot.
Add in diced tomatoes.

Add in chicken broth (or beef broth, if using).

Then add in can of tomato soup or tomato sauce (whichever you are using).

Give it all a good stir. Then add in rice.

Stir again.

Then add seasonings; sugar, garlic powder, salt & pepper (to taste).

Cover and let soup simmer on low-medium heat for about 30 minutes to let all the flavors blend.

And serve!

I agree with the country cook when it comes to sprinkling sharp cheddar cheese on top. It’s stuffed pepper soup for pete’s sake! it has to have sharp cheddar!
